(Breakfast) Griddle Cakes
3/4 cup milk 2 tablespoons butter, melted 1 egg 1 cup flour 2 teaspoons baking powder 2 tablespoons sugar 1/2 teaspoon salt
Put milk, butter and egg in mixing bowl. Beat lightly. Sift dry ingredients and add to milk mixture all at once. Stir just enough to dampen flour. Add more milk if necessary to make batter the thickness of heavy cream. Pour batter onto heated griddle using a 1/4 cup measuring cup. Cook until cakes are full of bubbles and the underside is nicely browned. Turn and brown other side. Serve immediately with butter and maple syrup. Serves 6 TNT List June 14, 1998
